This is smoked salmon done the Springs Smokery way: simply but beautifully. It's traditionally prepared, so that means it's just dry-salted and then cold-smoked, for three times longer than usual. There's no flavourings, colourings, or brine used, just the freshest salmon and their 50 year-old kilns. Springs Smokery are real master smokers. Their smokery kilns have been wafting out wonderfully scented oak smoke for half a century now. In 1964 the Harris family, based in Sussex, ventured into smoking fish, inspired by a Suffolk relative, and quickly found that they had a knack for it. And that all a good smoked fish needs is time. They source the freshest fish from suppliers that hold the same high welfare standards as they do, and the oak that they use to smoke the fish is from the forests around Arundel. It sounds quite magical, which is exactly what their smoked fish is.
