This organic herb brie is the cheese which disappeared quickest when we had some in our office. It’s a very delicious cheese. A brie that’s light and chalky with sage, thyme, oregano and marjoram. It belongs with in a sandwich with a lot of salad.

Simon Weaver's Cotswold Organic Dairy is relatively new to cheesemaking, but his cheeses are already getting lots of attention - in the space of just one year, he has scooped two Taste of the West awards and a Gold medal at the 2006 World Cheese Awards! All his cheese is made from milk from his herd of Fresians, who graze the Cotswold meadows of the River Dikler.

Storage & prep

The cheese should be refrigerated, and then returned to room temperture for between 30 minutes to an hour before being eaten. The brie should always be tightly wrapped. As soon as mold appears on the cheese it should be disposed of.
