Easy Chia Pudding

Quick, no-cook breakfasts don't come easier than chia pudding. Made with chia seeds soaked overnight in your choice of plant or dairy milk to make a creamy pudding that you can load up with fresh fruits, nuts, and seeds to make a satisfying breakfast that's brimming with all the good stuff.

Ingredients

  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1-2 tsp maple syrup (optional)
  • 150ml milk of your choice
  • Fresh fruit, nuts and seeds, to top

Method

1. The night before you want to eat your chia pudding, tip the chia seeds into a bowl. Add the vanilla extract and 1 tsp maple syrup, if you'd like to sweeten your pudding. Pour in your choice of milk (plant or dairy). Stir really well to mix everything together, then pop into your fridge and leave to soak for at least 8 hrs.
2. To serve, layer the chia pudding with your choice of fresh fruit, nuts and seeds and drizzle over a little maple syrup, if liked.
3. On The Go
Chia pudding is great for breakfasts on the go. Layer it up in a small jar or tub with your choice of fruit, nuts and seeds then seal and store overnight in your fridge. In the morning, just grab it and go.
