Easy Breakfast Waffles

Brighten up your breakfast with a batch of these light and crisp waffles. Top them with a rianbow mix of fresh fruit. Add a dollop of Greek-style yogurt and a drizzle of maple syrup. Brilliant for weekend brunches.

Ingredients

  • 100g butter, plus extra to grease
  • 200g self raising flour
  • 330ml full cream milk
  • A handful of strawberries
  • 2 kiwis
  • 1 ripe mango
  • ½ pineapple
  • A handful of raspberries
  • A handful of blackberries
  • A handful of blueberries
  • 450g Greek style yogurt
  • Maple syrup, to serve

Method

1. Pop the butter into a small pan and gently melt it. Sift the self-raising flour into a large bowl. Add a pinch of salt. Pour in the melted butter and then slowly trickle in 330ml milk, whisking continously, till the batter is thick and smooth. Set aside to rest while you prep the fruit.
2. Hull and thinly slice the strawberries. Peel and thinly slice the kiwi fruit. Peel and chop the mango and pineapple into small chunks.
3. Preheat your waffle irons. Melt a little more butter to grease them. When they're hot, brush the waffle irons with a little melted butter. Ladle in just enough the batter to fill the irons and cook the waffles for 3-4 mins or till golden brown. Transfer to a plate and keep warm in an oven set to its lowest temperature. Grease the waffle irons again and repeat until you have used up all the batter.
4. Divide the waffles between warm plates. Top with Greek style yogurt and the fresh fruit. Drizzle over a little maple syrup and serve.
