Curried Sweet Potato & Udon Noodle Soup

This warming noodle soup will brighten up your lunchtimes. Chewy udon noodles simmered in a coconut broth flavoured with fresh turmeric, garlic, ginger and lime. Chunks of sweet potato and shredded cavolo nero add freshness. Hearty, cosy and nourishing.

Ingredients

  • 400g leeks
  • A thumb of turmeric
  • 2 garlic cloves
  • A thumb of ginger
  • 1 tbsp curry powder
  • 1 vegetable stock cube
  • 400ml coconut milk
  • 500g sweet potatoes
  • 200g cavolo nero
  • 200g udon noodles
  • 1 lime

Method

1. Place a large pan on a medium heat and add 1 tbsp oil. Add the leeks. Season with salt and pepper and fry, stirring often, for 6 mins till softened. Add the turmeric, garlic, chilli and curry powder and fry, stirring, for 2 mins.

3. Crumble in the vegetable stock cube. Pour in the coconut milk and 1 ltr water. Pop on a lid and bring to the boil, then turn the heat down to a gentle simmer.
4. Meanwhile, peel and chop the sweet potatoes into small chunks. Add the sweet potatoes and noodles to the pan. Simmer, lid on, for 8 mins till the potatoes and noodles are just tender.
5. Trim the dry ends from the cavolo nero, then slice out the woody cores. Finely slices the leaves. Add the cavolo nero and simmer, lid off, for 4-5 mins till the veg and noodles are cooked through.
6. Squeeze in the juice from the lime. Taste and add more salt and pepper, if you think it needs it. Ladle the soup into warm bowls and serve.
7. Stain-Free Turmeric
Fresh turmeric likes to stain everything bright yellow, which is pretty but also annoying. When you’re preparing turmeric, use a glass chopping board or one you can wash up straight away, and wear an apron to protect your clothes. You can squeeze a little lemon juice onto your hands and rub them together to help shift any turmeric stains from your fingers.
