Onions are old school. Their cultivation can be traced back to the Bronze Age (delicious in a mammoth burger, maybe…) and they were pretty big in Ancient Egypt, too. These organic Pearl ones are sweeter than our other white onions but every bit as strong in flavour, which can mean tears at dinner time if you’re the one chopping them. To avoid blubbing, run your wrists under cold water if you start to feel your eyes stinging. Works every time.

These onions are from Massimo's Sicilian fields. His farm in Ispica, near the coast, gets beautiful weather that's perfect for growing the crops that Massimo sends us throughout the year, like onions, carrots, courgettes and fennel. Try this sweet variety sliced into a salad.

Storage & prep

Onions are maybe the most versatile vegetable going, whether they’re being roasted on their own or going into a sauce. They can be smelly to prep, though. To remove the aroma of onion from your hands, we recommend washing them in running water while holding a metal spoon. Store onions in the fridge (avoiding dampness) or in a cool, dark larder.
