Coming from healthy stocks, this wild Alaskan Albacore Tuna has been landed by an established cooperative of fishermen using hook and line off the coasts of Oregon and Washington. Their time-honoured methods reduce the harmful bycatch that you’d find with trawling, making this some of the most sustainable tuna around. The tuna will have been previously frozen during processing in Alaska, and shipped to Europe in freezer sea containers.
Albacore tuna has a firm, beef steak type texture, with large flakes and a mild rich taste to it. It has a much lighter colour than yellowfin or bluefin tuna, ranging from a light beige to rosy pink in the raw state. It is also has the most omega-3 amongst the tunas.
