This organic salami with truffle – or Salame al Tartufo in Italian – is rather special. Italian pork from Pedrazzoli farms is minced and evenly mixed using an already delicious traditional recipe, and taken one step further with added truffle shavings. The heady, earthy flavour of the truffles never overpower the delicate, cured meat. Instead, they combine with the sweet pork to create a perfect, mouth-watering balance, and an unmistakable flavour – testament to Pedrazzoli’s know-how when it comes to making magnificent cured meats.

Charcuterie afficionados Pedrazzoli call the wonderfully fertile and productive land of Emilia-Romagna their home, a territory in the north-east of Italy. Their hands have been busy making fine Italian meats since 1951, putting over half a century of experience under their belts. In 1996, they were one of the first salumificios (Italian for where cured meat is made) to switch over to organic completely. Bravissimo.
