Method
1. Peel the garlic and pop it into a small pan. Tip in the butter beans with the liquid from their tin, add the vegetable bouillon powder and mix well. Place the pan on a medium heat and bring to the boil, then turn the heat down and pop on a lid. Simmer for 10 mins till the beans are tender and the liquid has reduced by half. Take the pan off the heat and set aside, lid on, to keep warm.
2. While the butter beans simmer, trim the dry ends off the Tenderstem® broccoli. Peel and thinly slice the red onions. Roughly chop the parsley leaves. Fill and boil your kettle.
3. Drizzle ½ tbsp olive oil into a large frying pan on a medium-high heat. Add the sausages and fry for 5–6 mins, turning occasionally, till golden brown all over. Transfer to a warm plate and loosely cover with kitchen foil or another plate to keep warm.
4. Add another ½ tbsp oil to the frying pan and swirl it round. Add the onions and seaosn with a pinch of salt and pepper. Fry the onions for 5-6 mins, stirring often, till they've glossy and lightly browned. Take them off the heat.
5. While the onions fry, fill a medium-sized pan with hot water from the kettle and bring it back to the boil. Add the Tenderstem® broccoli and simmer for 3–4 mins till tender.
6. While the broccoli simmers, check the butter beans. They should be tender. Take the pan off the heat, add half the butter and use a hand-held stick blender or a masher to mash until smooth. Taste it and add a pinch of salt and pepper, if you think it needs it.
7. Drain the broccoli, then return it to the pan with the remaning butter. Toss together, till the broccoli is well coated in the melted butter.
8. Divide the butter bean mash between two warm plates. Top with the sausages and fried onions. Sprinkle over the chopped parsley and serve with the buttered broccoli on the side.
9. Love Your Leftover
Any leftover sausages and mash will keep in the fridge for up to 3 day. Divide the butter bean mash, sausages and broccoli between tubs, seal and store. Reheat in the microwave till piping hot.
