Peach, Prosciutto & Basil Croissant

Soft, flaky croissants filled with a summery mix of juicy peaches and salty prosciutto crudo make a delicious summer brunch.

  • 2 croissants
  • 1 peach
  • 4 tbsp crème fraîche
  • 4 slices of prosciutto crudo
  • A small handful of basil leaves

Method

1. Preheat your oven to 180°C/Fan 160°C/Gas 4. Place the croissants on a baking tray. Bake for 5 mins to warm through.
2. Meanwhile, slice the peach in half and scoop out the stone. Thinly slice the peach.
3. Remove the croissants from the oven and cut them in half. Top each croissant half with a generous dollop of crème fraîche. Top with the peach slices and a few slices of prosciutto crudo. Tear over a few basil leaves and crack over a little black pepper. Serve straight away.
