Ingredients
A thumb of ginger
2 apples
1½ ltr dry cider
4 tbsp Demerara sugar
2 cinnamon sticks
12 whole cloves
2 bay leaves

Method
1. Thinly slice the ginger. Thinly slice the apples. Push the cloves into a coupe of the apple slices. Pop the ginger and apple slices in a large pan. Pour in half the cider.
2. Add the sugar, cinnamon and bay leaves. Pop a lid on the pan and set on a medium heat. Bring up to a bubble, then reduce the heat and gently simmer for 20-30 mins.
3. Top up the pan with the remaining. Simmer for a few more mins to warm through.
4. Taste the mulled cider and add more sugar, as needed. If you've added more sugar, simmer for a few more mins to dissolve it. Ladle into mugs or heatproof glasses and serve.
