- 2 eggs
- 2 tbsp milk
- 4 slices milk & honey sourdough
- 4 tbsp Seville orange & cardamom marmalade
- 12-16 dark chocolate buttons
- 2 tbsp ghee

Method
1. Crack the eggs into a shallow bowl. Add the milk and whisk together. Set aside.
2. Place 2 slices of milk & honey sourdough on your work surface. Spread each one with 2 tbsp marmalade. Top with dark chocolate buttons. Add a sprinkle of sea salt. Cover with the remaining slices of bread.
3. Dunk 1 marmalade sandwich in the beaten egg. Turning to make sure it is well coated. Leave to soak for 1 min.
4. Warm a frying pan on a medium-high heat. Add 1 tbsp ghee to the pan and melt it. Add the soaked marmalade sandwich and fry for 2-3 mins, turning occasionally, till it's golden brown on both sides. While the sandwich fries, dunk the other sandwich in the egg mixture, turning to make sure it's well coated.
5. Transfer the cooked marmalade sandwich to a chopping board. Fry the second marmalade sandwich for 2-3 mins, adding more ghee to the pan if necessary. Transfer to the board. Halve and serve.
