Loaded Christmas Dipping Oil

A loaded dipping oil is an easy and quick starter. This festive version includes dried cranberries and figs. With finely chopped pistachios, fresh orange zest and fragrant rosemary. A snowdrift of Parmesan cheese and a pinch of chilli flakes for heat. Mix with a light, herby olive oil – like Citizens of Soil's Greek olive oil – and serve with fresh bread for scooping and dunking.

Ingredients

  • 30g dried cranberries
  • 3 dried figs
  • 50g salted pistachios in the shell
  • 50g sweet grilled pepers, drained
  • 30g Parmesan
  • 3 sprigs of rosemary
  • 4 sprigs of thyme
  • 1 orange
  • 150ml delicate and herby olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp runny honey
  • A pinch of chilli flakes
  • Focaccia, to serve

Method

1. Finely chop the dried cranberries and dried figs. Shell the pistachios. Rub off as much of the skins as you can, then finely chop them. Finely chop the sweet grilled peppers. Finely grate the Parmesan. Pick the rosemary and thyme leaves off their sprigs, then finely chop them. Zest the orange.
2. Pour the oil into a shallow bowl. Add all the chopped and grated ingredients with a generous pinch of sea salt and chilli flakes. Gently stir to mix.
3. Drizzle over the balsamic vinegar and honey. Serve with chunks of focaccia for dipping and scooping.
