Method
1. Preheat your oven to 180°C/Fan 160°C/Gas 4. Line a large baking tray or 2 medium baking trays with baking paper. Coarsely grate the cheddar. Finely chop half a bunch of chives (around 10g).
2. In a big mxiing bowl, beat the butter and mustard together till smooth and creamy. Beat in the chives and cheddar, then sift in the flour and stir to make a soft dough.
3. Turn the dough out and gently knead to make a smooth round. If you have time, wrap the dlough in food wrap and chill for 30 mins-1 hr.
4. Dust your work surface with flour. Roll out the dough and cut into circles. Place them on the lined baking trays and bake in the oven for 20 mins, or till a light golden brown.
5. Let them cool on the tray for a few mins, then transfer them to a wire rack to cool completely. Best eaten on the day they're made, but they will keep for 3-4 days in an airtight tin.
