Avocado, Lime & Ginger Smoothie

A creamy, dreamy green smoothie made with avocado pepped up with a burst of lime and a zing of ginger. Dates add sweetness while a sprinkle of nutrient-rich spirulina packs a flavour punch. Just add spinach and coconut water, and blend.

Ingredients

  • 1 ripe avocado
  • 1 lime
  • 1cm slice of ginger
  • 100g baby leaf spinach
  • 2 Medjool dates
  • 250ml coconut water
  • 1 – 2 tsp spirulina powder

Method

1. Halve the avocado and scoop out the flesh, discarding the stone. Pop the avocado into a blender.
2. Halve the lime and squeeze in the juice. Roughly chop the dates, removing the stones, then add the dates to the blender. Pop in the ginger and the baby leaf spinach.
3. Pour in the coconut water. Sprinkle in 1 tsp spirulina powder, adding more if you wish (it’s has a strong flavour, so you may prefer to build up to adding more).
4. Drop in a few ice cubes then whizz till smooth. Pour into 2 large glasses and serve.
