Asparagus with Feta & Mint

Asparagus are the sign of spring really is here. Grassy and herby, their tangy flavour is delicious matched with creamy Greek feta and a pinch of fresh mint.

Ingredients

  • 400g asparagus
  • A handful of mint
  • 120g feta

Method

1. Bring a large pan of salted water to the boil. Bend the asparagus spears to snap off the woody ends, trimming them so they look neat.
2. When the water is boiling, add the asparagus tips and simmer for 4-5 mins till the spears are just tender.
3. Meanwhile, pick the mint leaves off their sprigs and finely slice them. Crumble the feta.
4. Drain the asparagus and arrange on a serving plate. Drizzle over 1 tbsp olive oil. Season with salt and pepper. Gently turn to coat. Top with the crumbled feta and sliced mint. Serve straight away.
