Their methods have much less impact on the sea bed, using only static nets and hand lines, from smaller boats, and they truly care about the quality of their catch. Sole of Discretion will always agree a payment in advance with their fishers, which means that no matter the market conditions, fishers can always rely on being paid fairly.

Heat some sunflower or rapeseed oil in a non-stock pan on a medium-high heat. Once hot, plop each fish cake in the frying pan and cook on one side for 4 minutes. Turn with a spatula and cook on the other side for a further four minutes. Don't be tempted to move the cakes while cooking as this may result in them breaking up.
