Carrot, Oat & Apricot Smoothie

Turn carrots into a tasty breakfast smoothie by blending them with oats, banana, dried apricots and cinnamon. It tastes like granola. And is a great way to add some veg to your monring meal.

  • 300g carrots
  • 1 banana
  • 25g oats
  • 50g dried apricots
  • A pinch or two of cinnamon
  • 250ml hazelnut drink

Method

1. Scrub and trim the carrots. Roughly chop them and pop them in your blender. Peel and break in the banana. Tip in the oats. Roughly chop the dried apricots and add them, along with a generous pinch of cinnamon.
2. Pour the hazelnut drink into the blender. Add a handful of ice cubes and blitz till smooth. Pour into a couple of glasses and serve, dusted with a little extra cinnamon.

Great flavoured smoothie - and a different way to use carrots. I put a little less dried apricots in as didn’t want it too sweet and added a scoop of Ancient+Brave True Collagen (protein powder) to make it extra filling, ????
