On Eastbrook Farm in Wiltshire, where her family has farmed for over 65 years, Helen is committed to working the land for the benefit of her animals, in line with the highest animal welfare standards. She raises her pigs slowly, organically and in a natural environment, where they can roam outside. The care Helen shows her animals and the unique dry-curing process she uses gives this organic wafer thin ham a powerful, rich flavour and a tender texture.
