If you’ve never baked flounder, this delicate beauty is about to find a plaice in your heart.

Flounders are an unloved species of the sea, partly because they like to spend a lot of time lying flat on the seabed, so their flesh isn’t always white.

There are no targeted fisheries for flounder. Instead, they are taken as by-catch in trawl nets. Stocks are not formally assessed but abundance appears to be increasing. It provides a delicious alternative to more vulnerable, longer-lived and overfished species of flatfish such as plaice.

Storage & prep

Store below 4C. Not suitable for home freezing (sometimes the fish would have been previously frozen).

To cook: Preheat the oven to 180C. On a piece of tin foil, season the fillets with salt and pepper, drizzle with olive oil and either a sprinkle of lemon juice or a drizzle of white wine. Seal the foil parcel and bake in the oven for 10 minutes.

Flesh of a flounder may not be white due to their diet, but they will become white when cooked.
