Gurnards are slightly odd-looking fish with a large bony head and distinctive snow plough shaped profile. For years they were thrown back or used as bait by fishermen but in recent years people have realised that they make great eating and their popularity is on the rise.

We love them as a base for stocks and stews, as well as in fresh, seafood soups.

Storage & prep

Store below 4C. Not suitable for home freezing (sometimes the fish will have been previously frozen).

To cook: simply place on some tin foil skin side up, drizzle with olive oil, sprinkle with herbs and season well. Cook on a medium – high heat for 6-8 minutes, no need to turn the fillets.
