This exquisite bit of organic charcuterie is made from the hindquarter, rump and loin of Aberdeen Angus beef. Having been air-dried, it has a lovely, deep red colour, and because it’s been matured for 8-9 months, the beef has an equally deep flavour – a perfect mix of sweet and salty. Mouth-watering stuff.
