We met with Eva & Marco who manage Sacoje, which is a co-op of twelve like-minded growers in the mountains of Spain.
Their whole farm is not organic yet, but the section which is thrives on steep slopes, which create a natural barrier between the organic crops and conventional produce. The farm is set out in a series of terraces which look spectacular and work well for water irrigation (think rice paddies, but with lettuce). Biodegradable plastic liners are used preserve water and keep the weeds at bay in this dry region of Spain. When the season's over and the cavolo nero is harvested, the liners are ploughed back into the soil where they harmlessly decompose.
