Roasting beets can be messy business, but these little babies are just the ticket. After quick scrub, just roll them in oil with a a pinch of salt. 40 mins at a med-low heat ought to ensure they're delicious, tender, and that the skins slip right off.
We'll be packing a mix of red and golden beetroots as well the strikingly stripy chioggia when they're available.
