Borlotti beans are beautiful things that almost look hand painted. They're excellent for brightening up salads with their smooth, sweetish flavour. They're commonly used in Italian and Greek cooking, great for pairing with Mediterranean flavours.

Richard Rowan of Coombe Lynher Farm in Cornwall is fairly new to the Abel & Cole club. His aversion to all things technology instantly endeared him to us (landline calls only, emails to his mate Geoff, who actually owns a computer). He's a modest chap, telling us, “Farming is 50% luck and 50% right conditions, right temperature and rainfall at the right time.” So that’s 50% luck and 50% luck then?

Storage & prep

De-pod these beautiful little shiny beach pebble lookalikeys (the pods are edible, but they're a bit too tough to be enjoyed at this time of the season). Boil your beans till tender and toss with olive oil, lemon juice and zest, and black pepper. Or toss them into a garlicky tomatoey stew with sautéed veg.
