Daylesford Organic has been farming organically for over 35 years, with a simple passion for real food. Daylesford works in partnership with an organic pig farmer just 20 miles from their Gloucestershire farm who shares their philosophy and who, with a lifetime of experience, really knows how to look after his happy pigs; they spend their entire lives outdoors on open, organic pastures with free access to deep straw beds. Daylesford have built and operate their own organic abattoir, so that they can be involved in the entire process from field to packaging. Ensuring that all the animals get the highest quality of care is of the utmost importance to them, and running their own abattoir is the only and best way for this to happen. All their animals, including their pork, go through their organic abattoir.

Allowing between 250-300g of meat per serving, this joint should feed between 5-6 people. We guarantee three days life, including day of delivery.
Roasting a pork joint takes around 7 minutes per 100g, or 30 minutes per lb, plus a further 30 minutes, at around 180C/350F/Gas mark 4. If you want to ensure good crackling, pat the skin dry with kitchen towel and rub salt it before cooking, then cook at 240C/475F/Gas mark 9 for twenty minutes, and reduce the temperature back to 180C/350F/Gas mark 4 for the rest of the time. Why not whip up some home made apple sauce while you wait? Pork should be kept in the fridge, and should not be stored above other food, unless in a sealed container. Suitable for home freezing.
