These plump, violet hued organic aubergines with white 'graffiti' stripes look like something out of a still life painting. Inside, the aubergine is much like your average deep-purple one, with a slightly brighter white inside.

Because graffiti aubergines are so stunning, be sure to make the most of the skin. Half the aubergine and scoop out the flesh – dice, season, pan-fry and mix with couscous, feta, diced cherry tomatoes, pine nuts and a handful of herbs, then stuff the aubergine again and gently roast it till just tender.

Ingredients & allergens

Abel & Cole handles celery, celeriac, peanuts and nuts on site. Due to our packing process and re-use of boxes there is a risk of cross-contamination from these, and all other allergens.

While we do everything we can to ensure the information on this page is correct, ingredients, nutritional and dietary information are subject to change. So along with the information on our website, we always recommend that you read each label carefully before enjoying your items

Storage & prep

Aubergines are great to stuff! If used as a container for other ingredients, you will need to leave the skin on for support. Other recipes will want you to remove the skin (they do taste better peeled), firstly remove the stem and then peel downwards in long, thin strips. Then slice them into the shape you need. Keep your aubergine in a cool larder, or in the fridge. It is best eaten as fresh as possible. Once it has been cut, it will not keep well, so you should aim to use it all at once! Don’t forget to wash your fruit and veg before use.

Organic tastes better
We reckon slow grown food that’s allowed to go at its own pace tastes the best. Don’t just take our word for it.
"The vegetables are all really fresh, keep longer than supermarket and have so much more flavour."
