The team at Connage craft their delicious, high-welfare cheeses with milk from their organic dairy herd of Holstein Friesian cows, Jersey crosses and Norwegian Reds. The cows snack on luscious clover pastures along the shores of the Moray Firth all day.

This cheese is traditionally smoked on site by Callum and Monika, using oak whisky barrel shavings to impart a deep, smoky flavour to this well-rounded, nutty, creamy cheese.

The perfect addition to any cheese board, it’s excellent in toasties, pasta and pizza too. Try it paired with a full-bodied red or a complex, hearty whisky.

In the village of Ardersier you’ll find the family-owned and fully organic Connage Highland Dairy. Started by father Hamish Clark, Connage is now run by brothers Callum and Cameron, with their wives Jill and Eileen. Their organic dairy herd of 150 cows, mostly Holstein Friesian with Jersey crosses and Norwegian Reds, graze the luscious clover pastures around the dairy and along the shores of the Moray Firth. They’re proud to grow their own feed and have always made animal welfare their top priority, all while providing jobs for the local community.
