Traditional methods are still used to create a stunning, straw-colour and close texture, which is crafted exclusively from sheep’s milk.

Each wheel is hand-salted multiple times to impart a tangy depth of flavour, then aged for over eight months to develop a dry, granular texture. Perfect for finely grating and sprinkling over pizzas and pastas or shaving into paper thin slices to garnish your salads.
