Storage & prep

Store between 0°c & 4°c. Suitable for home freezing. Freeze on day of delivery. Fully defrost in a refrigerated environment over 24 hours. Once fully defrosted, use within 24 hours. Do not re-freeze.

Method:

Preheat your oven to 180°C for fan-assisted or 200°C for ovens without a fan (gas 6).

Remove the lamb from the packaging, pat dry, season with salt and pepper and bring to room temperature in a deep roasting tray. Place in the centre of the oven and roast for approximately 30 minutes, reaching a core temperature of 54°C for a medium rare finish.

Leave to rest in a warm place for a minimum of 10 minutes before carving.

Serving suggestions:

Serve with dauphinoise potatoes and seasonal greens.
