There’s an old saying that goes “the best things in life are brie,” and we’re not ones to argue with ancient wisdom. Simon Weaver Organics don’t mind reinventing the cheese-wheel however, and their unusual, organic blue brie is not to be missed. It’s moulded with Roquefort, which develops as the cheese ages into an aromatic wonder that’s at its best towards the end of its life. This blue beauty is excellent with bread and wine, but goes down swimmingly in salads, melted on steaks or adorning any good cheese board.

The Weavers have been tending their land in the Cotswolds for three generations now, through traditional methods of organic farming. They know that if their land is kept pristine, and their animals are happy, their cheese will be rather excellent. All of their brilliant know-how helps too, of course.
