- 750g carrots
- 1½kg potatoes
- 450g onions
- 1½ swede

A mix of roasted roots is delicious on the side of your roast. Chop peeled potatoes, carrots and swede into equal sized chunks. Pop them in a hot roasting tin with a splash of olive oil, a handful of rosemary and thyme leaves. Roast in a hot oven for 40-50 mins till charred and tender.

Sticky balsamic onions are delicious with roast pork. Peel and slice some onions into rings. Lay on a baking tray. Drizzle over 2 tbsp balsamic vinegar, 1 tbsp olive oil and 1/2 tbsp caster sugar. Tumble together and roast for 15-20 mins till softened and caramelised.
