Nuts About Greens

A delicious emerald green concoction of juicy fruits and leafy, mineral-dense greens, whizzed with magnesium-packed cashews and probiotic kefir for a sweetly nutty morning pep up.

Ingredients you'll need
- 2 kiwi fruit
- ½ cucumber
- 35g cashews
- 250ml kefir
- 50g baby leaf spinach
From your kitchen
- A few ice cubes
Step by step this way
- 1.
Halve the kiwi fruit and scoop out the flesh with a teaspoon. Chop half the cucumber into small pieces. Tip into the blender.

Add the cashews, a few ice cubes and tuck in the baby leaf spinach. Pour in the kefir and whizz till smooth. Add more water to reach your desired consistency.

A nice long soak
If you have time, soak the cashews overnight in a bowl of cold water. Drain and rinse them, then use in the smoothie. - Tip
Half & half
If you have a large blender you can use all the cucumber - this will affect the nutritional content - or store it in your fridge for a couple of days. Add slices of cucumber to a jug water to delicately flavour it (good in a gin and tonic, too).
