Buttery Sprouts with Garlic, Thyme & Lemon

Christmas just isn't Christmas without a bowlful of beautiful green sprouts on the table. Our twist this year is to sauté them in plenty of butter spiked with thyme, garlic and lemon.

Ingredients you'll need
- 1kg Brussels sprouts
- 2 garlic cloves
- 100g butter
- A handful of thyme, leaves only
- 1 lemon

- Sea salt
- Freshly ground pepper
Step by step this way

Wash the Brussels sprouts and trim the stalky ends so they’re neat and flat. Pull off any torn leaves. Halve the sprouts.

Peel the garlic cloves and thinly slice them. Pick the thyme leaves off their woody sprigs and roughly chop them.
- 3.
Add 100g of the butter to a deep frying pan or wok and melt over a medium heat. Add the sprouts with a little pinch of salt. Slide in the sliced garlic and thyme leaves. Stir and fry for 4-5 mins so the sprouts are just tender, and are coated in the butter.

When the sprouts are cooked, squeeze over some lemon juice. Add a pinch of salt and pepper, stir and serve.
