Beef & Avocado Fajitas

Out of the frying pan and onto your dinner plate, spiced strips of organic beef take moments to get sizzling and ready to roll up in warm tortillas along with creamy, lime spiked avocado and cool, crisp lettuce.

Ingredients you'll need
  • 4 white tortillas
  • 250g beef stir-fry strips
  • 1 tsp ground cumin
  • A pinch or two of cayenne pepper
  • 1 little gem lettuce
  • 1 avocado
  • 1 lime

  • 1½ tbsp olive oil
  • Freshly ground pepper

Step by step this way

    Set your oven to its lowest temperature. Unwrap the tortillas and pop them on a large sheet of foil. Crimp the foil together to make a loose parcel, then pop the parcel in the oven. The tortillas will gently warm while you make the fajita fillings. No foil? See our tip.

    Tip the beef strips into a bowl. Add 1 tsp ground cumin and a pinch of cayenne (it’s spicy, so use as much or as little as you prefer). Add a pinch of salt. Stir everything together so the beef is evenly coated in the spices. Set aside for a few mins while you prepare the lettuce and avocado.

    Separate the lettuce leaves, rinse and pat dry. Finely shred them – if your lettuce is large you may want to just shred half the leaves. Pop them in a serving bowl and toss with ½ tbsp olive oil and a pinch of salt and pepper.

    Halve the avocado and scoop out the stone. Scoop the flesh out of the skin. Slice the avocado flesh and pop in a separate serving bowl. Finely grate the lime zest over the avocado, then squeeze over the juice and toss. If your avocado is very ripe, you can gently mash it with a fork.

    Put a frying pan on a medium-high heat and warm it for 2 mins. Add 1 tbsp oil and the beef strips. Stir fry for 5-6 mins till browned all over and cooked through. Scoop into a serving dish.

    Serve the warm tortillas with the bowls of beef strips, avocado and lettuce.

  • Tip

    Getting warmer
    If you don't have foil to make a parcel for your tortilla, there are a few more ways you can warm them ready for wrapping and rolling. If you have a microwave you can unwrap the tortillas, pop them on a plate and microwave for 30 secs till soft and pliable. Alternatively, wipe the frying pan clean after you have cooked the beef, then add a tortilla to the dry pan and fry for 15 secs. Flip, fry for 15 secs more. Slide the tortilla out of the pan and repeat with the rest.
