Banana, Thyme & Cashew Smoothie

Mix it up with this creamy banana thick shake, sweetened with crisp apples and scented with a fresh summery hit of thyme.

Ingredients you'll need
- 2 bananas
- 2 apples
- A handful of thyme, leaves only
- 35g cashews
From your kitchen
- 300ml cold water
- A few ice cubes
Step by step this way

Peel the bananas and break them into your blender. Quarter the apples, slice out the pips and cores, then roughly chop the apples. Add them to the blender.

Pick the thyme leaves off their sprigs. If the sprigs are woody you can push them through a sieve and the leaves will catch in the sieve. If the sprigs are white and soft, then you can add them to the blender along with the leaves.

Tip in the cashews. Pour in 300ml cold water and add a few ice cubes. Blitz till smooth, then pour into glasses to serve.

A nice long soak
If you have time, soak the cashews overnight in a bowl of cold water, then drain them and add them to your smoothie following the recipe. Soaking them makes them easier to blend and may make them easier to digest.
