Storage & prep

Store between 0°C & 4°C.

Suitable for home freezing. Freeze on day of delivery. Fully defrost in a refrigerated environment over 24 hours. Once fully defrosted, use within 24hours. Do not re-freeze.

Cooking instructions:
1. Remove steak from packaging. Pat dry and bring to room temperature.
2. Preheat a griddle or heavy based frying pan until it sizzles when you add a drop of oil. Liberally season the meat just prior to cooking.
3. Start by placing the fat side on the pan to render for a minute or two. Sear the steak on both sides over a high heat until nicely charred, then reduce the heat. Turn regularly and continue to cook (approximately 6-7 minutes each side for medium rare), basting with butter once nicely seared.
4. Alternatively, after the initial charring stage, add to a preheated oven (180°C/160°C fan/gas mark 5) for approximately 15 minutes, or until the core temperature reaches 52°C before resting.
5. Leave to rest in a warm place for half the cooking time before carving. Serve with french fries & blue cheese.
