Banana Peel & Peanut Butter Smoothie

Don't bin your banana skins. Turn them into a smoothie instead. Blended with oranges, raspberries and a splash of coconut drink, they make a rich and creamy breakfast drink.

Ingredients

  • 2 pieces of banana peel, approximately 30g
  • 1 orange
  • 80g raspberries
  • 1 tbsp peanut butter
  • 200ml coconut drink

Method

1. If the woody end is still attached to the banana peel, slice it off. Roughly chop the peel. Or snip it into pieces with kitchen scissors. Pop the peel in a blender.
2. Slice the skin and white pith off the orange, then quarter the orange and add to the blender with the raspberries and peanut butter. Pour in the coconut drink and add 3-4 ice cubes. Blend till smooth. Pour into a glass and serve straight away.
3. No Waste, More Taste
When you eat a banana, slice the woody end off the peel and separate the strips of peel into individual pieces, or chop/slice them. Pop them in a freezerproof tub and freeze. They'll keep for about 6 months, so they're ready to add to smoothies straight from the freezer. Banana peels are thought to be high in fibre, so be mindful of how much you add to your smoothies to begin with.
