Storage & prep

Store between 0c & 4c. Suitable for home freezing. Freeze on day of delivery. Fully defrost in a refrigerated environment over 24 hours. Once fully defrosted, use within 24 hours. Do not re-freeze

To cook:
1. Remove joint from packaging, pat dry then bring to room temperature. 
2. Preheat your oven to 220°C/200°C fan/gas mark 7.
3. Choose a heavy-based, flame-proof roasting tray then, over a medium heat, start by browning the fat then sear on all sides for about 10 minutes.
4. Place in the centre of the oven to roast for 25-30 minutes, until the core temperature reaches 52°C before resting for a medium rare joint.
5. Rest for a minimum of 20 minutes before carving.

Serve with chilli, tomato & lime salsa.
