Got the cauli wobbles? You're in luck as freshers week at cauli college has just begun. These tips work for any cauliflower, whether it’s a fractally Romanesco number, or a cloudy white (or green, or orange) one.
What on earth to do with cauliflower
The whole roast
Roast your cauli whole for a magnificent veg centrepiece. Leaf the leaves on. Steam whole for about 10 mins to soften it. Drizzle with olive oil. Roast till golden and tender. Serve whole on a cutting board with a pot of cheese sauce and grilled bacon.
Quick cidery cheese sauce
Melt 1 tbsp butter till frothy. Stir in 1 tbsp plain white flour till it makes a paste. Gradually whisk in 200ml cider. Swirl in 100g grated cheese (Cheddar or Caerphilly). Crack in some pepper.
Chop chop cauli bop
Chop your cauli into little florets. Fry bits of smoky bacon or pancetta till crisp. Add your florets. Fry till golden. Season with pepper. A handful of chopped parsley is nice.Mix with cooked pasta, a splash of the cooking water and a tub of mascarpone. Top with breadcrumbs fried with garlic.
