The lesser spotted lettuce spotter's guide

British lettuce season is here. This is your guide to the organic beauties from Colin Andrews’ Herefordshire farm that'll be cropping up in your boxes this summer.

  Green Frilly  

A soft variety, its frilly leaves are great at holding
lighter dressings like a vinaigrette. Types of this lettuce : Aleppo, Ezatrix

Red and Green Salanova

A hardy yet soft lettuce that holds its shape when cut. Slice the base off and use the leaves to scoop up dips. Types of this lettuce : Klee, Xandra, Descartes

  Cos  

A crisp lettuce, gorgeous quartered 
and griddled on a barbecue.
Ace with a creamy dressing.
Types of this lettuce : Ticcos, Madelona

Freshen up  

Keep your lettuce in the fridge in Tupperware or a
bowl and cover with a paper towel to keep it crisp
and fresh. The plastic bags your lettuces arrive in
keep them fresh till you can unpack them. None of
that modified atmosphere nonsense. Just recycle the
bag or leave it for us to collect. See our handy salad

   Summer dresses   

Honey Cider Vinaigrette

Shake in a jam jar: 4 tbsp olive oil,
1 tbsp cider vinegar, 1 tbsp honey and
1 tbsp water.

Creamy dressing

Swirl 4 tbsp crème fraîche with 1 tbsp olive
oil, 2 tsp mustard, 1 tsp cider or white wine
vinegar and 1 tsp ground coriander.

Fruity dressing

Stone 2 nectarines and peaches. Blend with
1 tsp honey, 1 tbsp water, 1 tbsp olive oil and
½ finely chopped chilli for a zingy dressing.
